What's for dinner ?

Probably build-your-own burritos over here. My preferred combo is beans, sour cream, and olives, while DH adds cheese and taco meat.

Tonight's my Friday and I'll be home on the late-ish side as well as the lady so it'll likely be some sort of delivery for dinner.
 
I'm getting off easy today. Ham steaks, taters and a salad. The weather is making me jones for some ribs though. May have to smoke up a rack and maybe some chicken this coming weekend to put this rats-a** winter behind us.

Good idea, I think I'll smoke some ribs on Sunday. I'll grab about 6 racks on Saturday, put a rub on them overnight. Put them in the smoker around noontime @ 275. Don't think about them again until dinner. Hmmmm... ...side of homemade slaw, and I'll do some fresh cut fries in peanut oil. I'll only get a 2# bag of russets though so the rest of the food gets eaten.:p

My french fries are highly sought after. I once through a cookout for 10 people. We had 6 lobsters, 10# of steamers, 10# of delmonico steaks, and 20# of potatoes. I ran out of potatoes and only 2 lobsters, 2 steaks, and about half a pound of steamers were eaten. Fries, wiped out and people still asking for more.
 
Sounds like a plan. No fries here though. Smoked ribs, chicken, my favorite slaw and a spicy veggie medley I do should round things out.

Pull 'em from the freezer tomorrow an into the fridge so they'll be thawed Sat. Then take the membranes off, rub 'em, wrap 'em in plastic wrap and into the fridge for 24 hours before hitting the smoker at 250-275 Sunday afternoon. Got my mouth waterin' already. I'll hoist a glass and think of ya probably about 6:00 on Sunday. ;)

I switch around alot of woods, hickory, apple, cherry, pecan, etc. Tried mosquite once and I'm convinced that's just a marketing ploy by Texans to get rid of that crap. blech (at least that's our opinion).

I'll have to look, I think I have a couple chunks of cherry left so that may win. Although, since I'm also going to do come chicken, I may pass altogether and just use BGE lump all by itself. The cherry can have a tendency to blacken the chicken. Tastes fine but can look kinda funky.

Actually, first time out I think I'll just go with the naked lump.

My goto is hickory for pork. I like apple for beef and red meats. Mesquite can be overpowering, but if you limit the smoke time with it it good. You can't have smoking with your food for hours like you can hickory. Like you probably do, I have a lot of orchards and native apple trees around, so it's pretty easy to get my hands on that. Hickory can be a little harder to find.
 
Chill dinner:
"Chef's salad" of arugula, soppresata, hard boiled eggs, goat cheese, cucumbers, cherry tomatoes, croutons (with house bread), creamy lemon vinaigrette.
Clean, simple, easy, and nice and healthy. :)
 
Tonight is pizza. Dough made with some over ripe levain (sourdough), soppresatta, brussel sprouts, cherry tomatoes, capers, goat cheese, mozz, parmesan, chili flake. Okay, there will be two different pies, not all toppings on one. ;)

Since babysitting a croissant dough from 9am-4pm wasn't enough, figured I'd make a nice dinner:
Risotto with brussel sprouts, asparagus, peas, fava beans, romano cheese and a roasted tomato oil for garnish. Oh, and a soft boiled egg on top for good measure. :)
 
I worked today and my wife worked tonight. We needed something quick and easy for dinner during our overlap home time. I grilled out some burgers and we ate a few chips.
Was quick and easy and was pretty yummy. I buttered and grilled the buns and some onion to make the burgers special.
 
One of those "clean out the fridge" dinners. :rolleyes:
Going with a veggie sorta version of chicken and waffles.
Buttermilk waffles with soft boiled eggs, mushrooms, greens and peas. Let's hope it works (and we'll likely omit the maple syrup ;))
