One thing I like making from time to time tonight:
Pasta pancake; essentially boil some pasta (spaghetti, angel hair, etc) mixed with a couple eggs and cheese. Fry it in one batch, top with whatever.
Going with roasted cherry tomatoes, seared mushrooms and a pea sauce.

^^^^ That sounds interesting. I think I'm grilling out some burgers. Youngest will be here with her boyfriend. Was planning on going out to my favorite Mexican restaurant tonight... still might. Sure sounds good.

Tonight is a quick and dirty Trader Joe's dinner.
Mandarin chicken, rice/orzo, green beans with mushrooms and almonds. Pretty straight forward and doesn't take too long. :thumb:

Eggs and British muffins for breakfast, spam and eggs for lunch, and this for dinner:

Caprese salad and deviled eggs.

That makes 6 eggs for me today

I grilled ribeys and baked some sweet potatoes.

Tonight I'm turning leftover smoked chicken into chicken burritos. If you throw enough hot sauce and chili seasoning... some cheese and sour cream, I think you can hide anything in a burrito lol.
