MIUI has different menus, different versions of many system apps, plus a very different launcher (though you can install the usual 3rd party launchers instead if you prefer).

CM and Oxygen are more similar - CM has a few more customisation options, but quite a lot of them are present in Oxygen as well.

Looking at rooting now as I've got absolutely no memory left. I like Sense, so which would be the best ROM to go for? T-mobile UK branded handset btw

teppic76 stock rooted gingerbread rom would be a good start as its what you already are familiar with but rooted
if you follow the guides to create an ext partition on your sdcard then flash the init.d version of his rom and the a2sd addon you will have ample space

Ta for that - I've been having a look round and fancy having a go with Gingerburst - does this use the same sense as the current Desire HD uses?

i dont know but if you want a gingerbread rom that is stable and uses the same sense then use teppic76's i will not recommend anything else as its the most stable rom base

So ap2sd just moves all of the apps, including those that will not natively move, onto the sd card? So basically, just maps, market, facebook and + then? Or does it still allow you to partition and have shedloads of room?

Oxygen2.3 is out with android2.3.7. Nothing new. Seems to be bug fix version. Dev says ics is around the corner. Will it come to desire? I hope it does.

I don't think ICS will officially come to the Desire, i.e. via HTC.

But I expect ICS-based ROMs will start to appear shortly after it is released.

Updated to Oxygen 2.3, for a day or so. Nice, but I didn't find it that different from 2.2.2.

Now I am on SUroot's dGb on the 65 Mb /data-partition. Very nice so far!

New to rooting. Just went from HTC Gingerbread RUU to Redux 1.2 over the weekend. Will try CM6 (read some review that said it was more stable than CM7?) and MIUI XJ just to see what that's like.

now on oxygen 2.2.. latest - seems good - very similar to redux2/dGB etc

might try CM7.......but i think it looked a bit heavy to me from pics :/ shall revisit :D

Insert Coin. First time flasher, and wanted something with all the latest bells and whistles, and seemed to be stable. Seems good so far - no issues. Maybe try a more stripped Rom later, but just enjoying all the new stuff and space!
