Im running cyanogen 7.1 with the tiamat kernel now i made a nandroid backup right after i rooted before i flashe the rom, kernel and gapps so how can i go back to my stock rom and kernel? could i just wipe the phone then restore that first nandroid backup?

Yes.

it would be a good idea to make a backup nandroid of this setup first though, if you like it.

then, while still in recovery, wipe cache and dalvik cache and data, 3 times each, and then run the superwipe zip a couple of times.

Then restore the backup you made.

The question of what recovery you have is pertinent. Which one do you have? did you make that first nand with the recovery you have now? If not, if you changed recoveries after making it you might not be able to restore it unless you have the new Amon Ra Style backup that is very popular and good.

It can be found, along with directions to change recoveries and other flashing info in the Rooting for dummies, gingerbread guide.

I made the very first nandroid backup with the revolutionary recovery then i switched to the amon ra so am i good to go?

Also to restore that backup can i go to install from zip?

welcome to the forums!!!!!!!!!!!!!!!
if you made the nandroid with clockwork mod that came with revolutionary then it will not work with amon ra2.3. both nandroids are incompatible with each other. there is another recovery that can restore both recovery's nandroid backups and that is the amon ra style recovery. so you have some options if you want to go back to stock:

1.switch back to clockwork mod. it does not matter which you choose. but, if you do then i would choose clockwork mod 2.6. then you can restore the nandroid backup

2.switch to the amon ra style recovery. you can get it from the roms/kernel sticky. afterwards you can then restore the nandroid backup.

3.or you can flash the stock rom and start over. or even try a different rom like mikg 2.61.

If you want to go back to your stock nandroid, I would grab the new amon-ra style recovery and flash that. Then restore your stock nandroid with the new recovery.
Then you can experiment.
I will +1 MikG, and swagged out stock swag=on. Both are based on the stock Rom with some "extras".

Also, you dont need to wipe anything before restoring a nandroid.

+1 to this;)

There has been debate on whether or not to wipe between resotring a nandroid. Wiping is not necessary, just restore the nandroid and your recovery will do the rest
