If you're looking for the vanilla experience, ErisLightningBolt or White Widow are probably your best choices. I had pretty intense battery drain with ELB and a number of FCs/bugs with WW, but it seems like every phone/setup reacts differently to each rom, so I'd most definitely give them a try. Both are CyanogenMod-based.
You might want to try out xtrROM as well. It looks kinda neat. I haven't tried it personally, but it's on my to-do list.
At the moment, I'm running CyanogenEris and haven't had any problems beyond a little tweaking to get MMS to work.

WW just wont flap on my Eris.. I've tried two of them now.. perhaps down the line our good man andrizoid will have it all smoothed out; he knows I'm one of his fans.
Which version of Cyanogen are you running? I saw an XDA post referring to the latest as being buggy as compared to its predecessor.
I shied away from Lightningbolt after reading of its drag on resources (which seems odd, given its name).
