Really depends on the meat... I love peach or Apple wood for pork and chicken. Pecan for Turkey and chicken and hickory for my beef....

Oh yeahhhh.. I forgot. Don't talk about baths here in fl.. Might assume you will end up eating someone.

Morning folks, got a solid 3.5hrs of sleep! Good thing Sunday mornings are pretty chill at the restaurant. Last night went well, the party was large (~350 people) but we had 5 of us in the kitchen so no problems.

Wait, what?
The event last night I was helping with the catering company my wife works for. Basically just on site setup and plating of food. Nothing complicated. They contact you to see if you're interested in a job and then you work it. Better than being committed to another job.
I'll bring in some of the multi grain today, just had some toast. Delicious. I think with some tweaks to the recipe I have another bread to just always have on hand. Super healthy, tasty and has a longer shelf life than most others I make.

Actually, hickory is very good especially if you blend a sweeter wood in with it. It's especially good in grilling vegetables. A .stronger wood than most but I wouldn't consider it a bitter one really.

After about 48 hours i start to hollucinate but it isnt fun hollucinations, its like i see creepy things out the corner of my eye
