Assuming that is LauncherPro, just long-press on an app in the dock and it offers options to change the shortcut or the icon. Changing dock background is in the LP preferences.

It looks really nice, but doesn't it sacrifice readability somewhat?

The weather has gone, dead easy to read the other details.

gTab simi clock (the clock widget on that homescreen) includes that weather display as an option in the 4x1 widget.

Easy. Just click on the widget. Then menu/skins.
