What's for dinner ?

chicken and rice casserole? throw it all in a casserole dish..add something green like broccoli or peas maybe a carrot or two and bake until done! bout 40 min at 375... I'd cut up the chicken into pieces...and rice will cook with the liquid..ie..soup ...easy breezy:D oh ...and salt and pepper!!

Venison Burgers, Roast Vegetables (Courgettes, Aubergine, red onion, broccoli) in passata with garlic and rosemary and Mushroom rice. Followed by Banana Icecream with forest fruits.

My version is 1 box macaroni & cheese, prepared according to directions, with 1 can chili and 1 can corn (drained) mixed in, the combo heated to serving temperature. Shredded cheese or taco seasoning can also be usefully added if desired.

Easy, tasty, inexpensive, and some degree of nutritionally acceptable. :D

Apparently Treb, you seem to be our resident roadkill expert :p

I'm too lazy to get up & take a pic of the leftovers from tonight, but trust me it was some of the wife's best roadkill ever. :thumb:

Those dead armadillos on the side of the interstate can't stack up to Wifey Treb's creations.;)

Dinner tonight was insane. My mom went a bit overboard but we loved it all. Started with a meat and cheese platter - pepperoni and soppresata in olive oil with hot peppers, smoked Gouda, muenster, pepperoni cheese, Oregon blue cheese. And bruschetta on baguette. Dinner itself was sliders, garlic shrimp, chorizo, spinach salad, stuffed mushrooms, tater tots and trashy tater tots (cheddar stuffed in the tater tot, wrapped in bacon, rolled in brown sugar and baked). Finally was dessert - lemon meringue cupcakes, peanut butter balls, s'mores quesadillas. Oh, and dad made sangria for everyone.

Looks interesting, Kaat...

We're having a nice light mushroom and bacon quiche, salad, and homemade ciabatta. Light dinner before heading out to the movies. :)

Unless we go out tonight, going to be pizza! Using a different method for making the dough this time and still thinking about toppings. :)
