Home made burritos. Ground beef, diced onion, chili seasoning, pinto beans, salsa, shredded cheddar, and sour cream in a tortilla.
The wife came home to pick up some things to take back to her dad's house. While here she stocked the fridge. So tonight I raided it and had a simple salad. Italian dressing and French bread.
Smoked pork tenderloin and baked broccoli florets.
I plan to slice the remaining tenderloin into strips and make a stir fry. I'll serve it over fried rice. The Blackstone rocks this cook.
That was an excellent use of the leftover pork tenderloin. My favorite stir fry is still chicken but the pork was a close second.

Think that it's gonna be some leftover rotisserie chicken and a salad for dinner tonight.

Leftover cheesy squash and we'll throw a few chicken tenders in the air fryer.
I might just order a pizza. It's been a few weeks and it's sounding half decent. If not pizza, I'll be inventing something that I have on hand.
Darling Bride cooked a pot of pinto beans with ham, so I made my signature cornbread but with a little twist: jalapeno cheddar cornbread.
I fixed some breaded chicken strips and some mac n cheese.
Biscuits and homemade blackberry jam.
The Darling Bride returned home to my loving arms after three days out of town. Before she hit the road home, I asked if she had any requests for dinner: she answered "nothing heavy". My solution was a plate of homemade bruschetta for us... it was easy to make, light fare and tasted awesome.
I grilled cheese burgers.
We broiled some kabobs in the condo and paired it with a summer squash, green bean, and onion medley.
I baked a couple of fresh Atlantic Cod filets for dinner. The wife likes her Cod smothered in lemon butter and lemon pepper. I baked mine with a bit of garlic, smoked paprika, chipotle pepper, and a dash of salt. A vegetable medley complimented the fish.
Ham and Navy beans for dinner. The recent colder weather had the dish sounding really good to me. It was!
We had bacon, egg, and cheese sandwiches on butter griddled toast.
I'm leaning towards having a chef salad. We had taco salad Saturday and I have a half bag of iceburg lettuce left that needs to be consumed.
The wife picked through the lettuce and found enough for a salad for her. It is very handy to buy a bag of mixed salad but it sure doesn't last very long. I made some potato salad and baked some breaded cod for a sandwich for my dinner.
Hot dogs grilled on the Weber. We had some potato salad and cucumber salad with the dogs.
I tried take out from a Mexican restaurant tonight. They have three restaurants in my area and the one in my town has been here a couple of years. I tried them when they first came to town and it's taken those two years to forget the misery of my first visit. I gave them a second chance tonight and was super happy with my food. It was well prepared and spiced and I thought very reasonably priced. I don't get fast food very often but they will be on my short list moving forward.

My sister made pasta, with beet meatballs as well as a few tomato basil sauce with spinach for my iron defency Anemina..
The Darling Bride is taking spaghetti and sauce to the church for our weekly free community outreach dinner; and set aside extra for the two of us. We'll have that tonight. Tomorrow we'll go to a local BBQ place to support them: the owner's wife was killed in a car wreck this morning when she was hit by a car being pursued by police. They need the help and support of the community.
